I love putting together finger foods when having friends over to the house. Their bite-sized portions allow people to mingle or hold a drink without worrying about a plate or utensil.
When it comes to finger foods, crudités are a great option. They're traditional French appetizers made from dipping raw vegetables in a sauce or a dip. This particular recipe is quite simple and utilizes three of my favorites from the garden - cherry tomatoes, chives and parsley!
|Once blended, add|
|• 1 teaspoon garlic (or 1/4 teaspoon of garlic powder)|
|• 2 tablespoons scallions, chopped|
|• 2 tablespoons fresh chives, chopped|
Wash 2-3 cups of cherry tomatoes and place them to the side. When planting tomatoes, keep in mind that they'll need at least 8 hours of sun to bring out their best flavors!Next you'll want to chop off the top of a red bell pepper and scoop out the ribbing and seeds. With an electric mixer, blend 1 cup of sour cream and 1/2 cup of cream cheese together.
Blend all ingredients together again.
Scoop this mixture into the hollowed bell pepper and garnish with parsley. Parsley not only complements most dishes, but also makes a great edging in the garden.
Finally, just place the pepper on a platter, scatter the cherry tomatoes around the dip on the platter, and let your guests enjoy!
