Health and Fiber Rich Vegetable Flan

Short crust pastry 8 Ounce
Spring onions 1 Bunch (100 gm) , sliced
Garlic 2 Clove (10 gm) , peeled
Button mushrooms 4 Ounce , washed
Courgettes 4 Ounce , washed
Chopped sage 1/2 Teaspoon
Chopped chives 2 Teaspoon
Olive oil 2 Tablespoon
Firm tomatoes 1 Pound
Eggs 4
Single cream 1/2 Pint
Salt To Taste
Black pepper To Taste
Fresh rosemary 1/2 Teaspoon



1) Preheat the oven to 400F.

2) Line the flan dish with the rolled-out pastry. Make little hole at the base of the dough. Bake for about 15 minutes.


3) In a frying pan, heat oil. Add in the onions, crushed garlic and courgettes. Saute till they brown lightly. Add in the mushrooms and fry for 3 minutes. Take the pan off the flame and let cool.

4) Halve the blanched and peeled tomatoes.

5) Add in the eggs into a bowl. Beat in the cream, sage, chives, salt and pepper.

6) Take the flan dish out of the oven. Spoon the fried vegetables over the base. Place the dish back in the pan.

7) Bake for about 35 to 40 minutes or till the mixture has set.


8) Put cream on top. Serve the Vegetable Flan hot or cold.
