Island Spiced Creme Brulee

Whipping cream 2 1/4 Cup (36 tbs)
Egg yolks 6
Sugar 1/3 Cup (5.33 tbs)
Ground cinnamon 3/4 Teaspoon
Ground allspice 1/2 Teaspoon
Grated nutmeg 1/4 Teaspoon
Spiced rum 2 Tablespoon (Captain Morgan)
White sugar/Brown sugar 1/4 Cup (4 tbs)



1)Preheat the oven to 350 degrees F.


2)Over low heat, gently warm the cream.

3)Beat together, egg yolks, spices and sugar to blend well. Add in the cream and incorporate well.

4)Now add in rum and skim off the surface foam.

5)Transfer into 6 custard dishes of 6 ounce each.

6)Set in a water bath and bake for 20 minutes until set.

7)Once it reaches room temperature, place in refrigerate.


8)Sprinkle with sugar, caramelize the sugar with a torch or broiler and serve.
