Light Creme Brulee

Berry 400 Gram
Vanilla essence 1 Teaspoon
Plain low fat yogurt 300 Gram
Greek yogurt 6 Tablespoon
Brown sugar 6 Tablespoon
Fresh mint sprigs 4


Preheat the grill to high.

Divide the fruit between 4 ramekins.

Mix together the vanilla essence and yogurt and pour on top of the fruit in each ramekin.

Now add a thin layer of Greek yogurt to each ramekin to prevent the mixture from curdling.

Sprinkle 1 1/2 tablespoons of brown sugar on each ramekin to cover the surface.

Place under the grill for 2-3 minutes until the sugar has caramelised.

Top with a little fresh mint and serve.
