Peach Brulee

Butter/Margarine 2 Tablespoon , melted
Lemon juice 2 Tablespoon
Ripe peaches 3 Large , halved, pitted, and peeled
Blueberries 1/2 Cup (8 tbs)
Vegetable cooking oil spray 1
Firmly packed brown sugar 6 Tablespoon
Mint sprig 3


Broiled with a caramelized crust of brown sugar, fresh peaches and blueberries make an irresistible light dessert.

In a shallow bowl, mix butter and lemon juice.

Turn peach halves in butter mixture, then transfer, cut side up, to a large broiler pan.

Fill each peach cavity with 1 tablespoon of the blueberries.

Set aside.

Line a large baking sheet with foil and generously spray with cooking spray.

Push 1 tablespoon of the brown sugar through a wire sieve onto foil to make an even layer about 3 inches square; repeat, making a total of 6 squares.

Broil about 6 inches below heat until sugar is melted (1 to 2 minutes); watch carefully to avoid scorching.

Let cool until set but still pliable (about 30 seconds).

With a wide spatula, set a sugar square on top of each peach half.

Broil about 6 inches below heat just until sugar crust drapes around peach (10 to 30 seconds).

Transfer to small bowls.

Garnish servings with mint and remaining berries.
