Hokkaido pumpkin | 1 , diced | |

Brown sugar | 1 Tablespoon | |
Tomato paste | 1 1/2 Tablespoon | |
Madras curry | 4 Teaspoon | |
Soy sauce | 150 Milliliter | |
Beef stock | 500 Milliliter | |
Madeira | 150 Milliliter | |
Lemon juice | 3 Teaspoon | |
Fresh basil | 1 Tablespoon |
GETTING READY
1. Place the dutch oven over charcoals.
2. Heat oil in a dutch oven. Saute beef in the oil. Season with salt and pepper and give it a good mix.
3. Remove beef from heat. Add onion, ginger and garlic and saute that well.
4. Add brown sugar and tomato and mix that in. Let it cook until the onions are a little tender.
5. Throw in madras curry and continue to fry for a couple of minutes.
6. Pour madeira and beef stock followed by beef.
7. Reduce heat, place the lid on top and then place the brisket over the lid.
8. Continue to cook for an hour. Throw in pumpkin and mix that in. Place the lid back on and continue to cook for another 30 to 45 minutes.
SERVING
9. Stir in some lemon juice. Transfer to a serving dish. Garnish with parsley and enjoy with steamed rice.
