How to Make Rainbow Cupcakes (Gluten Free)

Just because you may have a gluten allergy doesn't mean that you can't enjoy some sweet treats. These rainbow cupcakes will bring a smile to all ages.

Ingredients

Gluten free all purpose flour 1 1/2 Cup (24 tbs)
Baking powder 1 Teaspoon
Kosher salt 1/2 Teaspoon
Butter 1/2 Cup (8 tbs) (((room temperature)))
Sugar 1 Cup (16 tbs)
Eggs 2
Milk 1/2 Cup (8 tbs) (((fat free, whole or anything you like)))
Vanilla extract 1 Teaspoon (((use almond, lemon or any extract you like)))
Food coloring 3 Drop (((Classic Colors, use as needed)))
For frosting
Powdered sugar 2 Cup (32 tbs)
Vanilla extract 1 Teaspoon
Milk 3 Tablespoon (((2

Directions

GETTING READY

1. Line cupcake pan with liner and set aside.

MAKING

2. In a large mixing bowl combine flour, salt, and baking powder. Mix well and set aside.

3. In a separate mixing bowl add butter and sugar. Beat together until nice and smooth.

4. Drop egg, one at a time and beat after each addition.

5. Add vanilla extract and mix well.

6. Add a third of the milk to the wet mixture and beat well.

7. Add in a third of the dry ingredients and beat well. Repeat with the milk then dry ingredients until all of the ingredients are combined.

8. Take 6 separate bowls and pour batter equally among them.

9. Add different color into each, representing the colors of the rainbow and mix well.

10. Spoon the batter, in rainbow order, into a cupcake pan. Be sure put a small amount of each color so when all the colors are added the cupcake liner is only 2/3 full of batter.

11. Pop the pan in oven and bake for 20 minutes or until a toothpick when inserted in the center comes out clean.

12. Remove pan from oven and allow cupcakes to cool in the pan for 5 minutes. Transfer it to cooling rack and let cupcakes cool completely.

For Frosting:

13. In a large mixing bowl add butter and powder sugar. Beat until well combined.

14. Beat constantly and add vanilla extract and milk until you get the desired consistency.

SERVING

15. Spread frosting over cake and enjoy!
