In this video, Betty demonstrates how to make Cherry Cheesecake Cupcakes. These are small cheesecakes with a vanilla wafer bottom crust and a cherry pie filling topping.

Sugar | 2/3 Cup (10.67 tbs) | |
Eggs | 3 | |
Vanilla | 1 Teaspoon | |
Cherry pie filling | 1 Pound (approximately) | |
Vanilla wafers | 24 |
GETTING READY
1. Preheat oven to 350 degree F.
2. Take 2 muffin tins which can hold 12 cupcakes, and line it with paper liners.
3. Place a vanilla wafer in each cup, and set it aside.
MAKING
4. In a large mixing bowl, combine cream cheese, sugar, eggs, and vanilla. Beat until smooth.
5. Pour cream cheese batter on top of the vanilla wafer, fill about 2/3 of the way up.
6. Pop it in oven and bake for about 20-22 minutes or until lightly browned and a toothpick when inserted into the deepest part comes out clean.
7. Remove cupcake from oven and let it cool for 10 minutes.
8. Top each cupcake with about 2-3 cherries and some sauce from the cherry pie filling.
9. Cover with plastic wrap and refrigerate until time to serve.
SERVING
10. Serve cheery cheesecake cupcake chilled and enjoy!
