In this video, Betty demonstrates how to make Cream Cheese Chocolate Chip Cupcakes. These are deep, dark chocolate cupcakes that are self-filled with a gorgeous cream cheese-chocolate chip blend.

Neufchatel cheese | 8 Ounce , softened (you may use cream cheese) | |

GETTING READY
1. Line a muffin pan with paper liners and set it aside.
2. Preheat oven to 350 degree F.
MAKING
For Filling:
3. In a small bowl, add cheese and sugar. Whisk well.
4. Drop egg and beat well. Throw chocolate chips and fold to spread evenly.
For Batter:
5. In a small bowl, combine cocoa powder and boiling water. Stir until smooth, and set it aside.
6. In a very large mixing bowl, mix together butter, sugar, eggs, and vanilla. Using an electric mixer beat on high speed for 5 minutes or until light and fluffy.
7. In a medium-sized bowl, add all-purpose flour, baking soda, baking powder, and salt. Mix well.
8. Drop dry mixture, a little at a time into the bowl with egg mixture, alternating with cocoa mixture, beating at low speed after each addition. Do not over beat.
9. Use a large spoon or scoop, fill the lined muffin tins with batter, about 2/3 full.
10. Spoon 1 heaping teaspoon of cream cheese mixture into the center of each cupcake.
11. Pop the pan in oven and bake for 15 minutes, or until a toothpick when inserted in the center comes out clean.
12. Remove pan from oven and place it on cooling rack to cool.
SERVING
13. Serve cupcake with a glass of milk.
