Ingredients

Dosa batter  
Long grain rice 1 1/2 Cup (24 tbs)
Urad dal 1/2 Cup (8 tbs)
Channa dal 1/2 Cup (8 tbs)
Thick poha 1/2 Cup (8 tbs)
Fenugreek seeds 1 Teaspoon
Sugar 1 Teaspoon
Salt To Taste
For aloo masala:
Coconut oil 1 Tablespoon
Dry chillies 2
Green chillies 4
Curry leaves 20
Urad dal 1 Teaspoon
Mustard seeds 1/2 Teaspoon
Turmeric powder 1/4 Teaspoon
Ginger 1/4 Teaspoon
Ginger 1/4 Teaspoon
Chopped onion 1 Cup (16 tbs)
Salt To Taste
Chopped tomato 1 1/2 Cup (24 tbs)
Chopped potato 3 Cup (48 tbs)
Red chilli powder To Taste
Coriander jeera powder 1 Tablespoon
Water 1/4 Cup (4 tbs)
Coriander leaves To Taste
Sambar:
Toor dal 1/2 Cup (8 tbs)
Masoor dal 1/2 Cup (8 tbs)
Turmeric powder 1/4 Teaspoon
Salt To Taste
Oil 1 Tablespoon
Mustard seeds 1/2 Teaspoon
Dry whole red chillies 4
Curry leaves 12
Asafoetida 1 Pinch
Sliced onion 1 Cup (16 tbs)
Tomato 1 Cup (16 tbs)
Carrot 1/2 Cup (8 tbs)
Zucchini 1/2 Cup (8 tbs)
Sambar masala 1 Tablespoon
Chili powder To Taste
Tamarind paste 1 Tablespoon
Coriander leaves 1/4 Cup (4 tbs)
Chutney:
Grated coconut 1/2 Cup (8 tbs)
Roasted chana daal 1/4 Cup (4 tbs)
Salt To Taste
Ginger To Taste
Garlic To Taste
Chili To Taste
Curd 1 Tablespoon
Curry leaves 10
Coriander leaves 1/4 Cup (4 tbs)
Water 1/2 Cup (8 tbs) (use as required)
