American Breakfast (Southern) - How to make Biscuits/ Scones with Gravy.The breakfast of the Southern states of America consists of crumbly, soft scones or biscuits with creamy gravy cooked in Bacon fat. This is not only a perfect breakfast recipe but also a perfect snack time recipe.
For the biscuits: | ||
Flour | 2 Cup (32 tbs) (about 280 gms) | |
Cold butter | 105 Gram (about 7 tbsp) | |
Salt | 15 Gram (about 1 tbsp) | |
Baking soda | 1/2 Teaspoon (about 3 gms) | |
Baking powder | 30 Gram (about 2 tsp) | |
Buttermilk | 3/4 Cup (12 tbs) (about 250 ml) | |
Jamun pulp | ||
Bacon fat | 40 Gram (about 1/3 cup) | |
Butter | 210 Gram (about 14 tbsp) | |
Flour | 250 Gram (about 1 3/4 cup) | |
Cold milk | 1 Liter (about 4/5 cups) | |
Salt | To Taste | |
Black pepper | To Taste | |
Nutmeg powder | 1 Teaspoon |
FOR THE BISCUITS / SCONES:
GETTING READY:
1.Preheat your oven to 220 degrees.
MAKING:
2.To the flour add butter, salt, baking soda and baking powder, mix it till it resembles sand or breadcrumbs.
3.Make a well in the centre of the mixture and add buttermilk to it and incorporate it well. When the whole thing comes together roughly, knead the dough well on a floured surface.
4.Roll it out lengthwise and fold it in, repeat the process as shown in the video thrice.
5.Make small spheres of the dough and bake the biscuits for 15 -18 mins at 220 degrees in a pre heated oven.
FOR THE BACON GRAVY:
MAKING:
1.Add bacon fat and butter to a suacepan on medium flame and let it melt.
2.Add same quantity of flour to the melted mixture, after they are completely incorporated, add cold milk to the hot roux (the mixture), keep on mixing it continuously so that no lumps are formed.
3.Then add salt, black pepper and nutmeg and mix it again. When the gravy is thick, its done.
SERVING:
4.Serve it with biscuits and enjoy.
