Chili Mac Southwest Skillet

This is just one take on a group of recipes that go by many names: Beefaroni, Chili Mac, American Goulash, American Chop Suey, Southwest Skillet... Hamburger Helper. All of these recipe have three things in common: Ground beef, macaroni, and tomatoes from that starting point you can add ingredients and spices to make it whatever you want.
This time we chose to use our Taco Seasoning Spice mix to make a cheesy Chili Mac!

Ingredients

Rice wine vinegar 1 Teaspoon
Taco spice 3 Tablespoon (30
For the tadka:
Can diced tomatoes 28 Ounce (1 can)
Pepper To Taste
Beef stock 1 Cup (16 tbs) (250 ml)
Salt To Taste
Shredded cheddar cheese 1 Cup (16 tbs) (250 ml)
Salmon 2 ((skin on))
Salt To Taste
Grapeseed oil 2 Teaspoon ((use as required))
Pepper To Taste

Directions

MAKING:

1.Put the macaroni in a bowl and cover with boiling water.

2.Let the macaroni sit in the hot water while you chop up the veg and brown the beef - 10-15 minutes.

3.Prep the onion, peppers and garlic - chop or dice as fine or rough as you want.

4.Sauté the ground beef until browned.

5.Transfer to a plate.

6.Remove any excess fat, leaving behind just enough to coat the pan.

7.Cook the onions, and peppers in the pan with the salt until they are soft, and just beginning to brown.

8.Stir in the garlic, and taco spice, and cook until the garlic is fragrant.

9.Add the hamburger back to the pan.

10.Pour tomatoes with the juice into the pan along with the the macaroni.

11.Add beef stock and bring to a rapid simmer, cover and simmer until the liquid has reduced and the pasta is cooked.

12.Adjust seasoning with salt, pepper, or more spices.

13.Spread on the cheese until melted.

SERVING:

14.Serve with nacho chips and sour cream.
