Today we're making Mango Tomato Salad!

Ingredients

Heirloom tomatoes 2 Cup (32 tbs)
Mango 1 (manila)
Salted duck egg 2 , boil
Chives 1/2 Cup (8 tbs)
Salt To Taste
Yuzu 1/2 , crumbled (dried yuzu)
For dressing:
Cane vinegar 2 Tablespoon
Sugar 1 1/2 Teaspoon
Fish sauce 1 Tablespoon
Achiote oil 1/2 Teaspoon
For achiote oil:
Vegetable oil/Canola oil 1 Cup (16 tbs)
Annatto seeds/Achiote seeds 1 Tablespoon
Bay leaf 1
Garlic 3 Clove (15 gm)
Black peppercorns 5
