Spicy Mexican Pasta Bake

As good as a visit to Mexico! Try this delicious Spicy Mexican Pasta Bake, which is topped with the all-time favourite Mexican salsa sauce and loaded with cheese, which adds a smooth texture to the dish. The coriander and cumin flavoured white sauce adds more zing to this dish! Serve along with Garlic Bread and Vegetable Cutlets.

Ingredients

For salsa:
Oil 2 Teaspoon
Chopped onions 1/4 Cup (4 tbs)
Chopped capsicum 1/4 Cup (4 tbs)
Chopped tomatoes 1 Cup (16 tbs)
Chilli powder 1 Teaspoon
Salt To Taste
For the pasta:
Oil 1 Tablespoon
Chopped onions 1/4 Cup (4 tbs)
Chopped capsicum 1/4 Cup (4 tbs) ((red and yellow))
Cumin powder 2 Teaspoon ((jeera powder))
Dry red chilli flakes 2 Teaspoon
Cooked penne 2 Cup (32 tbs)
White sauce 1 1/2 Cup (24 tbs)
Chopped coriander 2 Tablespoon ((shania))
Salt To Taste
Ground black pepper To Taste ((kalimirch))
Grated process cheese 1/2 Cup (8 tbs)

Directions

FOR THE SALSA:

MAKING:

1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.

2. Add the capsicum and sauté on a medium flame for 1 minute.

3. Add the tomatoes, chilli powder, salt and pepper, mix well and cook on a medium flame for 1 minute. Keep aside.

FOR THE PASTA:

GETTING READY:

1.Preheat the oven at 200C (400F).

MAKING:

2.Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.

3.Add the capsicum, cumin seeds powder and chilli flakes and sauté on a medium flame for 2 minutes.

4.Add the pasta, white sauce, coriander, salt and pepper and mix well.

5.Pour the pasta in a greased baking dish, spread the prepared salsa on top and spread it evenly.

6.Sprinkle cheese on top and bake in a pre-heated oven at 200C (400F) for 15 minutes.

SERVING:

7.Serve hot.
