Learn how to make Fish En Papillote, that is, fish baked with veggies at home.
Basa fish fillet | 1 (about 300 grams) | |

For dressing: | ||
Extra virgin olive oil | 2 Tablespoon | |
Fresh lemon juice | 1 Tablespoon | |
Thyme | 1/4 Teaspoon | |
Red chilli flakes | 1/4 Teaspoon | |
Salt | To Taste | |
Pepper | To Taste | |
Fresh dill | 100 Gram , chop | |
For veggies: | ||
Zucchini | 1/2 , thinly sliced (in half | |
Carrot | 1 , slice | |
Potato | 1 Small , peeled (sliced) | |
Leek | 1 Small , chop |
GETTING READY:
1.Start with seasoning the Basa fish with salt and pepper and keep it aside.
2.Pre-heat your oven at 180 degrees Celsius.
MAKING:
3.To make the dressing: In a glass, pour the extra virgin olive oil.
4.Add the fresh lemon juice and the thyme to it.
5.Add the chilli flakes (adjust to your spice levels), salt and pepper and give it a nice stir.
6. Add a bunch of the freshly cut dill to the above dressing and stir well.
7.To make the veggies: Use half zucchini and cut it into small, half-moon shaped pieces.
8.Slice up the carrot and the potato.
9.Add all these veggies in a bowl and add most of the dressing to the veggies (save about 2 tsp. for the fish) and toss the veggies with the dressing.
10.To make the parcel: Take a parchment paper and start layering all the ingredients on it.
11.The first layer would be of the chopped leek. Top this layer up with the veggies that you tossed with the dressing.
12.Spread the veggies evenly over the layer of leek.
13.Place the seasoned fillet of Basa fish over the layer of veggies.
14.Drizzle on the leftover dressing (about 2 tsp.) and also sprinkle the remaining dill over the fish.
15.Seal the parchment paper by folding and turning it inwards from all sides. Make sure you seal the parchment paper well.
16.Bake the fish in the pre-heated oven for about 15-17 minutes.
17.Once it's slightly puffed up, take it out of the oven and carefully cut the parchment paper.

18.Your delicious fish en papilotte is ready to serve.
