Middle Eastern BUDDHA BOWL - Meal Prep

Following on the heels of my Mexican Buddha Bowl that you all seem to love, I decided to make another one with a Middle Eastern flair. Many of you know that I was born in the Middle East so these flavors are near and dear to my heart. Since the goal is to eat more healthy, Ive included grilled veggies with lots of flavor and a wonderful and fresh Tabouleh. And of course some Chicken and some Fava beans. I also prepared a really easy fresh salad dressing that you could use with so many other dishes and salads.

Ingredients

For veggies and marinade:
Eggplant 1 Large , chop (roughly 1 1/2 cups)
Zucchini 1 , chop (roughly 1 1/2 cups)
Salt 1/2 Teaspoon
Freshly cracked black pepper 1/2 Teaspoon
Aleppo pepper 1/2 Teaspoon
Olive oil 2 Tablespoon
Pomegranate molasses 1 Teaspoon
For chicken shist tawook and marinade:
Chicken breast 1 Pound , cut into cubes
Lemon 1 , juiced
Spice 1 Tablespoon (Shish Tawook spice)
Salt 1/2 Teaspoon
Freshly cracked black pepper 1/2 Teaspoon
Aleppo pepper 1/2 Teaspoon
Dried mint 1/4 Teaspoon
Crushed garlic 1 Teaspoon
Olive oil 1 Tablespoon
Pomegranate molasses 1 Teaspoon
For tabouleh:
Chopped parsley 2 Cup (32 tbs)
Diced cucumber 1/2 Cup (8 tbs)
Diced tomato 1/2 Cup (8 tbs)
Salt To Taste
Olive oil 1 Tablespoon
Dried mint 1 Pinch
Aleppo pepper 1 Pinch
Lemon juice 1/2 Teaspoon
Burghul 1/4 Cup (4 tbs) , soaked (broken)
Water 1/2 Cup (8 tbs)
Fava beans 1/4 Cup (4 tbs)
Lemon wedges 1/4 Cup (4 tbs)
For the dressing:
Lemon juice 1/2 Cup (8 tbs)
Olive oil 2 Tablespoon
Salt 1/2 Teaspoon
Aleppo pepper 1/2 Teaspoon
Pomegranate molasses 1 Teaspoon
Freshly cracked black pepper To Taste

Directions

GETTING READY:

1.Prepare and slice the Eggplant and Zucchini and marinate.

2.Repeat the same process with the Chicken.

MAKING:

3.Prepare the Tabouleh by mixing together all the Tabouleh ingredients.

4.Prepare the dressing by adding all the ingredients to a bottle and give it a good shake.

5.Assemble the bowl - Start with the tabbouleh, some grilled veg, some fava beans, some Chicken Tawook, a wedge of lemon and some of that delicious dressing!

SERVING:

6.Serve and enjoy!
