Kerala Chicken Sandwich / Spicy Chicken With Parathas

Spicy chicken cooked in all the flavours from Kerala, sandwiched between homemade parathas and topped with a simple half fried egg!

Ingredients

Boneless chicken 400 Gram
For marination:
Pepper and fennel powder 2 Tablespoon
Turmeric powder 1 Teaspoon
Salt To Taste
Lemon 1/2 , juiced
For the filling:
Coconut oil 2 Tablespoon
Onions 2
Green chillies 2
Garlic 1 Teaspoon
Ginger 1 Teaspoon , finely chopped
Coriander powder 1 Teaspoon
Turmeric powder 1 Teaspoon
Red chilli powder 1/2 Teaspoon
Garam masala 1 Teaspoon
Black pepper powder 1/2 Teaspoon
Water 1 Tablespoon
Vinegar 1 Tablespoon
Curry leaves sprig 1
Crushed black pepper 1 Tablespoon
Coconut 2 Tablespoon , shredded
For the sandwich:
Parathas 2 (homemade)
Egg 1

Directions

MAKING:

For Chicken:

1. Marinate chicken for 10 minutes with lemon juice, turmeric powder, pepper powder,

and salt. Keep this aside while we make the masala for the filling.

2. Heat a pan with coconut oil. Add in the sliced onions and green chilies. Let it sauté on

medium heat till light brown (3-4 mins).

4. Add finely chopped ginger and garlic, mix well for a minute. Add red chili powder,

coriander powder, garam masala, and turmeric powder. Mix well add salt if needed.

5. Add in the marinated chicken. Mix well, add vinegar, cover and cook. If there is water

allow it to evaporate.

6. Open, and add in the coarsely grinded pepper powder and mix well.

7. Let the chicken dry roast on low flame for another 5 minutes or until it becomes blackish

brown in color. Make sure that you stir/mix it well, so that it does not stick to the

bottom of the pan.

8. Lastly sprinkle curry leaves, crushed black pepper and shredded coconut and give a nice

stir.

For the Sandwich:

9. Layer one paratha with the cooked chicken.

10. Cover it with another paratha and top with a half fried egg.
