Spring Minestrone With Leeks / Budget Bites Episode Number 2

Sometimes you just need a super easy recipe to avoid fast food. Not only can you throw this together with ease but its under 12!


Chopped leeks 1 Cup (16 tbs)
Chopped carrots 1 Cup (16 tbs)
Chopped green beans 1 Cup (16 tbs)
Cherry tomatoes 1 Cup (16 tbs) (((keep them whole)))
Red potatoes 1 Cup (16 tbs) , chopped finely
Garlic cloves 5
Chicken stock 4 Cup (64 tbs)
Salt and pepper To Taste
Olive oil/Butter 2 Tablespoon
Fresh parsley/Dill 1 Tablespoon
Lemon juice To Taste
Parmigianino reggiano cheese To Taste



1. Sautee leeks in butter or olive oil. Add garlic and sautee another minute.

2. Add all veggies and sautee until tender, about 10 mins.

3. Add your chicken stock and simmer 30 mins.

4. Garnish with lemon juice, fresh herbs and parm reggiano.


5. Serve with your favorite bread swiped with butter and crisped up in the oven.
