My version of a Cuban style hamburger. It includes the spice mixture for the meat, a really good mojo and the traditional cooking technique. Enjoy!
80/20 ground beef | 2 1/2 Pound | |

Mexican oregano | 1 Teaspoon | |

Ground cumin | 1/2 Teaspoon | |

For mojo | ||
Olive oil | 1 Tablespoon | |
Garlic clove | 6 , mince | |
Tomato paste | 2 Tablespoon | |
Sour orange juice | 1 1/2 Cup (24 tbs) (or substitute with a mixture of orange and lemon juice) | |
Tomato sauce | 1 1/2 Cup (24 tbs) | |
Ground cumin | 1 Teaspoon | |
Salt | 1 Teaspoon | |
Black pepper | 1 Teaspoon | |
Chopped onion | 1 Cup (16 tbs) (as needed) | |
Hamburger buns | 10 (more or less as needed) | |
Fried potatoes | 1 Cup (16 tbs) (as needed) |
GETTING READY
1. In a large mixing bowl, combine ground beef, Aleppo pepper, chili powder, granulated garlic, salt, ground coriander, Mexican oregano, black pepper, ground cumin, and ground clove. Mix well.
2. Cover the bowl with saran wrap, pop it in refrigerator and let it rest for 4-5 hours.
MAKING
3. Place a skillet on flame and saute minced garlic with some olive oil until fragrant.
4. Add tomato paste, sour orange juice, tomato sauce, ground cumin, salt, and black pepper. Stir well and bring it to a boil.
5. Turn the heat to low and simmer for 15-20 minutes. Remove 2/3rd of the sauce from the pan and reduce the remaining.
6. Using ice cream scooper, roll meat to medium sized balls.
7. Preheat and grease grill grates with oil.
8. Place patties on hot grill, squeeze them down, top them with onion, smash, pour some mojo on top and cook until done.
9. Toast buns on grill.
FINALIZING
10. Place patties on bun, sprinkle some reduced mojo sauce and top it with fried potato.
SERVING
11. Serve immediately with fried plantain and enjoy!
