It's that time of year when almost every food item seems to turn green. There's green beer, green cakes, green eggs, and even green pizza (ewe!). I dunno, it seems that green occurs naturally in so many foods that you don't really have to dye anything. Sure, a green beer is nice but I am going to stick to this mojito. It's always green and always tasty!

Ingredients

Rum 1 1/2 Cup (24 tbs)
Limes 4 , juiced
Mint leaves 20 Medium
Cucumber 1 Small , sliced
Green tea 1 Cup (16 tbs)
Club soda 2 Dash
Sugar 3/4 Cup (12 tbs)
Water 3/4 Cup (12 tbs)
Lime wedges 4 Small
Cucumber slices 8 Medium
Ice cubes 2 Cup (32 tbs)
Mint sprigs 4 Small

Directions

MAKING

1. In a saucepan, put together sliced cucumber, sugar and water and bring to a boil.

2. Lower the heat and simmer the mixture until all the sugar dissolves.

3. In a cocktail shaker, put together mint leaves, ½ of the lime juice and muddle the mint leaves.

4. Add in green tea, cucumber simple syrup, rum, remaining lime juice, and mix with a spiral spoon.

5. In a glass with ice, strain the green tea mixture and stream in soda water.

SERVING

6. Garnish this with mint leaves, few slices of cucumber and lime wedge and serve chilled.

TIPS

You can serve this cocktail in a salt or fine sugar rimmed glass.Recipe Courtesy of: cookingstoned.tv
