Betty's Meringue Shell with Fruit Topping

In this video, Betty demonstrates how to make a Meringue Shell with Fresh Fruit topping. This is a dramatic dessert for your holiday table, and the topping can be changed to your favorite fruits.


Egg white 2
Vinegar 1/2 Teaspoon
Salt 1/4 Teaspoon
Sugar 1/2 Cup (8 tbs)
Apricot preserves 1/2 Cup (8 tbs) (heated and cooled to a consistency to brush on top of fruits)
Fruits 200 Gram (granny smith apple, red delicious apple, strawberry halves, and kiwi or any other you like)



1. Preheat oven to 275 degree F.

2. Line a baking pan with parchment paper and set aside.

3. For topping, rinse and dry fresh fruits that complement each other. Cut into slices.


4. In a medium sized mixing bowl, add egg whites, vinegar, and salt. Beat until frothy.

5. Gradually drop sugar, about 1 tablespoon at a time into the bowl. Beat until stiff peaks form.

6. Spoon meringue on the prepared baking tray.

7. Using back of tablespoon, shape meringue into circle about 8 inches in diameter.

8. Slowly shape the circle to look like shell, making the sides about 1 3/4 inches high.

9. Pop the baking pan in oven and bake for 60 minutes. Turn off the oven, and allow meringue to cool in oven for 2 hours.


10. Place slices of a Granny Smith apple one-half way around the bottom of the meringue shell. Then arrange red apple slices the rest of the way around, letting the peels show.

11. With brush apply apricot preserves on apples to prevent browning.

12. Place fresh red strawberry halves on green apple slices, and kiwi fruit on red apples.


13. Serve meringue shell with fruit topping and enjoy.


Do not fill meringue shells with fruits until they are completely cool.

You can use any fruits you like. I used red and green theme for Christmas.

You can arrange fruits depending on your choice.
