Heavy cream 4 Cup (64 tbs)
Buttermilk 3 Tablespoon
Vanilla bean 1


Mix the cream and buttermilk in a large bowl.

Pour into a glass jar with a tight-fitting lid, cover, and let stand in a warm place for at least 12 hours or until it has thickened.

Chop the vanilla bean into small pieces and add to the cream.

Refrigerate overnight.

Just before serving, lightly whip the crime fraiche with a whisk or an electric mixer set on the slowest speed.

Crime fraiche will keep in the refrigerator for up to 10 days.
