Creme De Menthe Jellies

Cold water 4 Tablespoon
Powdered gelatin 2 Tablespoon
Granulated sugar 1 Pound
Water 1/4 Pint
Pepper oil 6 Drop
Green coloring 2 Drop (Few Drops)
Cornflour 1 Ounce
Icing sugar 2 Ounce



1. In a teacup, , measure about four tablespoons of water and sprinkle gelatin into it and set it aside to soak

2. In a pan, measure quarter pint of water and the sugar and stir over low flame to dissolve; strain through a muslin cloth into a clean saucepan

3. Add bakc into the saucepan and bring to a boil again without stirring till a drop in a saucer of cold water forms soft balls

4. turn the heat off, add the gelatin solution and heat again at low heat for a minute to blend the gelatin

5. Turn the heat off, add oil of peppermint and leave overnight to turn firm

6. Pour into a 7" buttered, square cake tin adn leave overnigh till firm


7. In a square piece of greaseproof paper, sift cornflour and sugar

8. Loosen one end of the the jelly mixture and pull on the bed of sugar; cut into inch thick strips and into inch long squares again

9. Dip edges into the sugar misture so they don't stick together


10. Serve as required
