Milk 2 Cup (32 tbs)
Coarsely ground espresso coffee 4 Ounce
Sugar 3/4 Cup (12 tbs)
Salt 1 Pinch
Brandy 3 Tablespoon
Egg yolks 5


In a small sauce pan, place the milk and the coarsely ground coffee beans.

Bring to a simmer and remove from the heat.

Let sit for 10 minutes.

Strain out the grounds.

Stir in the sugar, salt, and brandy.

Whip the egg yolks and quickly whip the hot milk into the yolks.

Return to very low heat and stir until thickened.

You may wish to use a double boiler for this step.

Chill the custard and serve with small cookies for dessert.
