1938 Chocolate Rice Whip Recipe Depression Era Dessert Recipe. Even during the Great Depression and at the dawn of WW2 people needed a little something to celebrate with. This chocolate rice pudding is perhaps that recipe.

Ingredients

Milk 1 Cup (16 tbs)
Salt 1/4 Teaspoon
Unsweetened chocolate square 1 1/2
Egg yolks 2
Sugar 5 Tablespoon
Cooked rice 1 Cup (16 tbs)
Vanilla 1 Teaspoon
Egg whites 2
Whipping cream 1/2 Cup (8 tbs)

Directions

MAKING:

1. Combine milk, salt, and grated chocolate.

2. Heat in top of double boiler, until chocolate is melted.

3. Add slightly beaten egg yolks and the sugar.

4. Cook until mixture coats the spoon, while stirring constantly.

5. Add the rice and vanilla.

6. Remove from fire.

6. Chill.

SERVING:

7. Before serving, fold in the stiffly beaten egg whites and whipped cream. Pile in serving glasses.
