Chicken with Cashew Nuts is a delicious stir fry, inspired by my local Chinese restaurant. Tender slices of chicken breast are stir fried with vegetables, hokkien noodles and a scrumptious sauce. Quick enough for weeknight dinners and impressive enough to serve to friends, this dish will keep everyone happy - give it a go!
