Easy Ratatouille

Ratatouille is a quick vegetable stew that can be served as a side dish or a main meal. Garlic, capsicum, eggplant, zucchini and tomatoes are combined to create this delicious, yet easy to prepare dish - give it a go!

Olive oil 1 Tablespoon
Eggplant 1 Small , chopped
Red capsicum 2 Small , sliced
Zucchini 2 Small , sliced
Tomatoes 3 Small , chopped
Red wine vinegar 1 Tablespoon
Water 1/4 Cup (4 tbs)
Pepper To Taste
Salt To Taste
Fresh parsley To Taste
