Roasted Carrot Soup is a simple yet delicious soup that is very easy to prepare. Carrots are roasted until tender. Combined with chicken stock and garlic, then blended until smooth - this healthy and flavourful dish is perfect any time of year.

Ingredients

Carrots 1 Kilogram , peeled and chopped
Olive oil 2 Tablespoon
Chicken stock 4 Cup (64 tbs) (1 liter)
Cold water 2 Cup (32 tbs)
Garlic cloves 2 , crushed
Freshly cracked black pepper To Taste
Sour cream 1 Tablespoon (optional) (Optional)
