Sole and Sweet corn

Ingredients

Sole fillets 8
Egg 1 , beaten
Quick cooking oats 6 Ounce
Butter 4 Ounce
Onion 1 , chopped
Mushrooms 4 Ounce , sliced
Sweet corn 15 1/2 Ounce , drained (1 Can)

Directions

GETTING READY

1) Preheat the grill.

MAKING

2) Pat dry and the coat the Sole fillets in the beaten egg.

3) Dredge the fillets with the oats until thoroughly coated.

4) Grill the fish on a moderate grill for a few minutes on each side.

5) In a large frying pan, saute the onion and mushrooms in butter.

6) Stir in the sweet corn and heat thoroughly.

7) Transfer the vegetables on a large dish and spoon over rest of the butter.

SERVING

8) Top the vegetables with the grilled fish and serve the Sole and Sweet corn hot.
