Summer Corn Relish

Sugar 2 cups
Vinegar 2 cups
Salt 1 1/2 teaspoons
Celery seed 1 1/2 teaspoons
Ground turmeric 1/2 teaspoon
Onion 2 cups chopped
Tomato 2 cups chopped
Cucumber 2 cups chopped
Corn 2 cups, cut from cob
Cabbage 2 cups chopped



1.Take a large Dutch oven, put sugar, vinegar, salt, celery seed and turmeric into it.

2.Heat the mixture until it boils.

3.Stir in onion, tomato, cucumber, corn and cabbage.

4.Cook the ingredients for 25 minutes without covering.

5.Stir the mixture.


6.Serve warm.


The dish can be packed in scalded jars.
