Healthy Dessert - Carrot Cake Cookies

Try this healthy carrot cake cookie recipe that has zero no refined sugar! Just all natural stevia.

Ingredients

Unsalted organic butter 1/2 Cup (8 tbs) (At room temperature)
Stevia sweetener baking blend 3/4 Cup (12 tbs) (NuNaturals Nustevia Sweetener Baking Blend)
Sweet health erythritol crystals 1/4 Cup (4 tbs) (NuNaturals)
Applesauce 1/2 Cup (8 tbs)
Eggs 2 Medium
Vanilla extract 1 Teaspoon
Whole wheat pastry flour 2 1/4 Cup (36 tbs)
Baking powder 1 Teaspoon (1/2
Cinnamon 1 Teaspoon
Nutmeg 1/2 Teaspoon (Optional)
Fresh grated ginger 1 Teaspoon (Optional)
Shredded carrots 1 1/2 Cup (24 tbs) (1
Zucchini 1 Medium , shredded
Walnuts 1/2 Cup (8 tbs)
Raisins 1/2 Cup (8 tbs)
Salt 1 Teaspoon

Directions

GETTING READY

1. Preheat oven to 350 degrees.

2. Grease a cookie sheet or parchment paper spread on it and set aside.

MAKING

2. Blend together the butter, NuNaturals Sweetener Baking Blend and Erythritol until creamy.

3. Then add applesauce, eggs, and vanilla.

4. Slowly blend in flour & baking powder. Add the cinnamon and nutmeg & ginger (if using).

5. Lastly add the carrots, zucchini, walnuts, raisins and salt, blend well together.

6. Spoon batter on the greased cookie sheet or parchment paper, about 12 spaced out. Bake for 6 - 10 minutes depending on your desired consistency.

SERVING

7. Let cool, serve and enjoy!

TIPS

The longer you bake the cookies, the crunchier they would be.
