We've eaten a lot of cookies... these are one of our all-time favorites!
All purpose flour | 2 3/4 Cup (44 tbs) (657 mL) | |
Ground cinnamon | 2 Teaspoon | |
Cream of tartar | 2 Teaspoon | |
Baking soda | 1 Teaspoon | |
Salt | 1/2 Teaspoon (2 mL) | |
Sugar | 1 1/2 Cup (24 tbs) (375 mL) | |
Softened butter | 1 Cup (16 tbs) (250 mL) | |
Eggs | 2 | |
Pure vanilla extract | 2 Teaspoon | |
To coat cookies | ||
Ground cinnamon | 1 Tablespoon | |
Sugar | 1/4 Cup (4 tbs) (50 mL) |
GETTING READY
1. Preheat oven to 400 degree F or 200 degree C.
2. Line baking sheets with parchment paper and set aside.
MAKING
3. In a bowl, mix flour, cinnamon, cream of tartar, baking soda and salt.
4. In a large bowl, cream together sugar and butter until light and fluffy.
5. Add eggs, vanilla and mix well.
6. Gradually beat in flour mixture on low speed until completely mixed. Refrigerate the dough for 2 hours.
7. In a small bowl, mix ¼ cup of sugar and 1 tablespoon of cinnamon.
8. Scoop dough and shape into 1-inch balls. Roll in cinnamon sugar to coat and place 2-inch apart on parchment lined baking sheets.
9. Pop on oven and bake for 6-8 minutes or until lightly browned. Cool on baking sheet for 1 minute. Move to wire racks to cool completely.
