Everyone loves chocolate chip cookies - and these ones don't disappoint! Here I substitute some of the butter with cream cheese, making these light and chewy.

Packed brown sugar | 3/4 Cup (12 tbs) (175 mL) | |
Granulated sugar | 1/4 Cup (4 tbs) (50 mL) | |
Eggs | 1 Large | |
Pure vanilla extract | 2 Teaspoon | |
Semi sweet chocolate chips | 1 Cup (16 tbs) (250 mL) | |
Raisins | 1 Cup (16 tbs) (250 mL) | |
Dry ingredients | ||
All purpose flour | 2 1/2 Cup (40 tbs) (625 mL) | |
Cornstarch | 2 Teaspoon | |
Baking soda | 1 Teaspoon | |
Salt | 1 Pinch (Optional) |
GETTING READY
1. Preheat oven to 350 degree F or 180 degree C.
MAKING
2. In the bowl of a stand mixer, combine the butter, cream cheese, brown sugar, and granulated sugar. Beat on medium-high speed until well-creamed, light and fluffy.
3. Add egg, and vanilla. Beat until combined.
4. In another bowl mix the flour, cornstarch, baking soda, and salt until just combined.
5. Add the dry ingredients to the stand mixer slowly, in a couple of additions. Mix to incorporate.
6. Fold in the raisins and chocolate chips. Chill in the fridge for about 30 minutes.
7. Using a 2" scoop, form heaping mounds and flatten slightly with your hand and place on baking sheet.
8. Pop in oven and bake for 8-10 minutes, or until edges have set and tops are just beginning to set.
9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a rack to cool completely.
