Cheesecake Cookies

These are a strange animal - light fluffy pillows of goodness. A cross between a cookie and a cheesecake.


Unsalted butter 3/4 Cup (12 tbs) , softened (175 mL)
Cream cheese 3 Ounce (90g)
Sugar 2/3 Cup (10.67 tbs) (150 mL)
Pure vanilla extract 1 Teaspoon
All purpose flour 2 Cup (32 tbs) (500 mL)
For coating
Graham cracker crumbs 3 Tablespoon (as needed)



1. Preheat oven to 375 degree F or 190 degree C.


2. In a bowl, beat together butter, cream cheese, and sugar.

3. Pour vanilla extract, mix and then stir in the flour until well combined. Chill for half an hour.

4. Remove dough from refrigerator, scoop and form into 1" balls. Roll in graham cracker crumbs to cover.

5. Place cookie balls onto a baking sheet. You can leave as balls or flatten with a fork if you wish.

6. Pop in oven and bake for 12-15 minutes or until the edges are golden and the tops are slightly puffy.


7. Serve with a glass of milk and enjoy!
