Are you a fan of Dad's Oatmeal cookies? These aren't exactly a copycat version... but the flavor is pretty close.

Packed brown sugar | 250 Milliliter (1 cup) | |
Eggs | 2 | |
Vanilla extract | 1 Teaspoon | |
All purpose flour | 375 Milliliter (1 1/2 cups) | |
Ground cinnamon | 2 Teaspoon | |
Ground allspice | 2 Teaspoon | |
Ground clove | 2 Teaspoon | |
Salt | 1/2 Teaspoon | |
Baking soda | 1/2 Teaspoon | |
Quick cooking oats | 3 Cup (48 tbs) |
GETTING READY
1. Preheat oven to 375 degree F or 190 degree C.
2. Line baking sheets with parchment paper.
MAKING
3. In a mixing bowl, cream together sugar, brown sugar and butter until fluffy.
4. Add eggs and vanilla. Mix well.
5. In a medium bowl, mix together flour, allspice, cinnamon, baking soda, and ground clove. Mix well.
6. Add the dry mixture, a little at a time into the bowl with wet ingredients. Mix well.
7. Stir in oats and let dough stand at room temperature for 2 hours.
8. Drop dough by scoopfuls onto the baking sheets and flatten cookies slightly.
9. Pop the sheet in oven and bake for 10 minutes. Do not overbake.
10. Remove cookies from the oven when edges are just beginning to brown. Let them cool for a minute or two on cookie sheets. Transfer to wire rack and let cool completely.
