Gluten-Free Chocolate Chip Apricot Cookies

Ingredients

Unsalted butter 1 1/2 Cup (24 tbs)
Sugar 1/4 Cup (4 tbs) (Plain One)
Brown sugar 1/2 Cup (8 tbs)
Vanilla 1/2 Teaspoon
Gluten free baking soda 1/2 Teaspoon
Salt 1/2 Teaspoon
Egg 1
Gluten free baking mix 1 1/8 Cup (18 tbs)
Apricots 1/2 Cup (8 tbs) , chopped
Chocolate chips 1/2 Cup (8 tbs)

Directions

GETTING READY

1. Pre heat oven to 350 degrees F.

MAKING

2. In a stand mixer, add room temperature butter.

3. Add 1/4 cup of plain sugar, 1/2 cup of brown sugar. Turn mixer on medium and cream the ingredients together.

4. Add 1/2 teaspoon of vanilla, 1/2 of teaspoon of gluten-free baking soda and 1/2 teaspoon of salt.

5. Add 1 egg and 1 1/8 cup gluten-free baking mix.

6. Empty the 1/2 cup of apricots and one 1/2 of chocolate chips and stir everything together.

7. Put teaspoon size of ingredients and drop on to baking sheets.

8. Bake for 10-12 minutes.

SERVING

9. Allow to cool, cut and serve right away.
