You can make frosted pineapple cookies.These cookies are fruity, and are sweet, and what you would wish fruitcake would be. These are made with flour, butter, brown sugar, pineapple, and an egg. They are topped with an easy to make pineapple icing.
Crushed pineapple can | 8 Ounce | |
Butter | 1/2 Cup (8 tbs) | |
Brown sugar | 1 Cup (16 tbs) (1 cup packed brown sugar) | |
Eggs | 1 | |
Vanilla extract | 1 Teaspoon | |
All purpose flour | 2 Cup (32 tbs) | |
Baking powder | 1 1/2 Teaspoon | |
Baking soda | 1/4 Teaspoon | |
Salt | 1/2 Teaspoon | |
Confectioners sugar | 1 1/2 Cup (24 tbs) | |
Lemon zest | 1/2 Teaspoon |
GETTING READY
1. Pre heat the oven to 325 degrees F.
2. Grease cookie sheet with nonstick spray.
MAKING
3. Drain the can of pineapple reserving 3 tablespoons of juice.
4. In a mixing bowl, cream together butter and brown sugar until light and fluffy.
5. In another bowl, combine the dry ingredients, flour, baking powder, baking soda and salt. Give it all a stir.
6. Gradually add the dry ingredients in batches to the creamed butter and sugar.
7. Drop scoops of the batter on the cookie sheet 2 inches apart.
8. Bake for 17-20 minutes or until golden. Remove and cool on wire racks.
FINALIZING
9. For the Frosting: In a bowl, combine confectioners' sugar, lemon zest, and about 2 tablespoons of the pineapple juice to achieve spreading consistency.
10. Frost the cookies as desired.
SERVING
11. Store in an air tight container and serve from it.
