Chocolate Drop Cookies with Chocolate-Coffee Frosting

Ingredients

Shortening 1/2 Cup (8 tbs)
Firmly packed brown sugar 1 Cup (16 tbs)
Egg 1 , beaten
Semi sweet chocolate square
Vanilla extract 1 Teaspoon
Sifted cake flour 1 2/3 Cup (26.67 tbs)
Baking soda 1/2 Teaspoon
Salt 1/2 Teaspoon
Milk 1/2 Cup (8 tbs)
Chopped pecans/Walnuts 1/2 Cup (8 tbs)
Chocolate coffee frosting:
Cocoa 6 Tablespoon
Hot coffee 6 Tablespoon
Melted butter/Margarine 6 Tablespoon
Sifted powdered sugar 3 Cup (48 tbs)

Directions

GETTING READY

1. Preheat oven to 350°

MAKING

2. Cream shortening. Add sugar and beat until fluffy.

3. Mix egg, chocolate and vanilla. Beat well.

4. In a bowl mix flour, baking powder, soda, and salt.

5. Fold into creamed mixture and mix to make a stiff batter.

6. Add pecans and mix.

7. On ungreased cookie sheets drop dough by rounded teaspoonfuls, 1 1/2inches apart.

8. Bake for 10 to 12 minutes.

9. Remove from cookie sheets and cool on wire racks.

SERVING

10. Frost with Chocolate-Coffee Frosting while cookies are still warm.

11. To prepare Chocolate-Coffee Frosting, in a blender container mix first 4 ingredients.

12. Blend until smooth.

13. Fold in powdered sugar and mix well
