Peanut Brittle With Salt Roasted Nuts

Sugar 1 Cup (16 tbs)
Light corn syrup 1/2 Cup (8 tbs)
Butter 1 Teaspoon
Peanuts 1 Cup (16 tbs) , roasted
Vanilla 1 Teaspoon
Baking soda 3/4 Teaspoon



1. In 2 qt. glass batter bowl, blend sugar and syrup and microwave at high for 6-8 minutes until syrup turns a light brown color.

2. Stir in butter, peanuts and vanilla, mixing well and microwave at high for 1-1 1/2 minutes.

3. Place bowl on a cloth hot pad as it would be very hot.

4. Coat a cookie sheet lightly with butter.

5. Gently stir in baking soda until light and foamy and pour onto buttered cookie sheet.

6. Working quickly, cool partially by lifting edges with spatula so that the mixture won't stick.

7. When firm but still warm, turn over and pull the mixture thin.


8. Let it cool, break into small pieces and serve.
