Soft, chewy, cherry chocolate chip cookies! They are my absolute favorite chocolate chip cookies and you will love them, too! These cookies were included in my Holiday Cookies cookbook.
Flour | 2 Cup (32 tbs) | |
Baking soda | 1/2 Teaspoon | |
Salt | 1/2 Teaspoon | |
Butter | 12 Tablespoon | |
Brown sugar | 1 Cup (16 tbs) | |
White sugar | 1/2 Cup (8 tbs) | |
Egg | 1 | |
Egg yolk | 1 | |
Vanilla | 2 Teaspoon (or bourbon/dark rum) | |
Bittersweet chocolate chips | 1 Cup (16 tbs) | |
Dried cherries | 1 Cup (16 tbs) |
GETTING READY
1.In a large bowl, whisk together flour, baking soda and salt. Set aside.
2.Melt butter in the microwave and let cool. Cool.
3.Beat together both sugars with cooled butter. Add egg and yolk and vanilla.
4.Mix in the flour mixture until well combined.
5.Stir in chocolate and cherries.
6.Let dough sit for 10-30 minutes.
7.Preheat to 325ºF. Line two sheets with parchment and set aside.
MAKING
8.Using a cup measure to portion batter. Space 2 inches apart. You will probably only fit 6 to a sheet.
9.Bake 15 minutes.
10.Take out the baking sheet from the oven and allow to cool completely on cookie sheets. Store in airtight containers.
SERVING
11.Serve with milk/tea or coffee.
NOTES
Try cherry flavored dried cranberries for a lower-cost alternative to expensive dried cherries.
For a more sophisticated cookie, melt butter in a small pot over medium heat. Melt it, then continue to cook it, stirring often, for about 5-8 minutes or until golden. You just made browned butter.
