Apple Pie? In a Cookie? Yeah. It's possible. These are soft, chewy cookies flavored with fall spices - cinnamon and nutmeg, and speckled with bits of baked apple and white chocolate. Can YOU resist? I can't.
NOTE- I say 1/2 cup granulated sugar in the video but it's really 1/4 unless you decide not to add the apple bits, in which case it can be 1/2.

GETTING READY:
Preheat oven to 350°F/180°C.
Line baking sheets with parchment paper.
MAKING:
In a bowl, cream together butter and sugar. Add eggs, vanilla and beat well.
In a bowl, combine flour, baking soda, cornstarch, cinnamon, nutmeg, salt and mix well.
Add to butter mixture and mix well to get a thick batter. Add apple chunks and 3/4th of chocolate chips. Mix well and cover with a cling wrap.
Pop into refrigerator and allow to stay for 1 hour to maximum overnight.
Scoop the dough into even sized balls and roll in cinnamon sugar until well coated.
Pop into oven and bake for 8-9 minutes until golden brown. Place remaining chocolate chips on cookies when warm.
