How To Make No-Bake Chocolate Cookies- Gluten Free!

Chewy, gooey, sticky, Ooey. The epitome of cookies- a no-bake chocolate cookie full of all things delicious- peanut butter, coconut and chocolate (doh!) plus it's gluten free. Can it get any better? Yes. They take under 10 minutes to make.

Ingredients

Granulated sugar 2 Cup (32 tbs)
Cocoa powder 1/4 Cup (4 tbs)
Butter/Margarine 1/2 Cup (8 tbs)
Milk 1/2 Cup (8 tbs) (skim, whole, evaporated
Quick cooking oats 3 Cup (48 tbs)
Desiccated coconut 1/2 Cup (8 tbs) (plus extra for garnishing)
Crunchy peanut butter 1/2 Cup (8 tbs)
Vanilla extract 1 Teaspoon (PLEASE make sure that you're using vanilla extract not essence, essence is a lot more powerful in taste so you'll have to reduce the amount you add!)
Melted dark chocolate 3 Tablespoon (for drizzling)

Directions

MAKING:

Heat a saucepan and combine sugar, cocoa, butter and milk.

Bring to boil and allow to boil for 2 minutes.

Add oats, coconut, peanut butter, salt, vanilla and stir well.

Place 2 spoonful mounts of mixture on parchment paper. Flatten to size of cookie.

Allow to cool for 10 minutes and drizzle with melted chocolate.

Sprinkle with desiccated coconut.

 

SERVING:
