Deluxe chocolate chip cookies recipe has nuts, oatmeal and coconut in addition to the chocolate chips. I LOVE these cookies. They are easy and the dough can be frozen for months so you can bake warm chocolate chip cookies any time you want!
Whole wheat pastry flour/All purpose flour | 1 Cup (16 tbs) | |
Rolled oats | 1/2 Cup (8 tbs) | |
Baking soda | 1 Teaspoon | |
Salt | 1/2 Teaspoon | |
Softened butter | 1/2 Cup (8 tbs) | |
Light brown sugar | 2/3 Cup (10.67 tbs) (dark brown can be used for chewier cookies) | |
Egg | 1 | |
Vanilla extract | 1 Teaspoon | |
Finely chopped mixed nuts | 1/3 Cup (5.33 tbs) (almonds, pecans, walnuts, whatever you like) | |
Semi sweet chocolate chips | 1/3 Cup (5.33 tbs) | |
Shredded coconut | 1/4 Cup (4 tbs) |
GETTING READY:
1.Preheat the oven to 350F.
2.Line a baking sheet with parchment paper.
MAKING:
3.In a large bowl, combine flour, baking soda, oats, salt and mix well.
4.Cream butter with sugar.
5.Add egg and vanilla extract and mix well.
6.Add the egg mixture with flour mixture and mix well to combine.
7.Fold in nuts, chocolate chips and coconut with hand.
8.Spoon the mixture on baking sheet into small balls (1.5 apart) and pop into oven.
9.Bake for 10-12 minutes at 350F.
10.Allow to cool before serving and store in an airtight container.
