Green Cherry Cookies - Saint Patricks Day

Candied green cherries 8 Ounce , chopped
Chopped walnut 1/2 Cup (8 tbs)
Flour 2 3/4 Cup (44 tbs) , divided
Butter sticks 2 (room temperature)
Powdered sugar 1 Cup (16 tbs)
Egg 1
Vanilla extract 1 Teaspoon
Shredded coconut 1/2 Cup (8 tbs)
Cooking spray 6 Dash



Preheat the oven to 350 degrees.

Grease the cookie sheets with cooking spray and set aside.


In a bowl, coat the cherries and walnuts with cup flour and keep it aside.

In mixing bowl, whisk butter, sugar, egg and vanilla extract until smooth. Add 2 cup flour and mix it well.

Fold in cherries and walnut mixture to cookie dough. Divide the dough into two parts.

On parchment paper, spread the coconut and roll the cookie dough with coconut like a log.

Roll the paper along with cookie dough log and refrigerate for about 2-3 hours.

Repeat the same process with rest of the dough.

Cut the cookies in about inch and place it on the cookie sheet.

Bake the cookies for about 13-15 minutes.


Serve the cookies on St. Patrick’s Day.


Makes about 40 cookies.
