Christmas Cookie - Homemade Gingersnap

These are my favorite and super easy Christmas cookie! I love using fresh ginger in the cookie to give it an added kick.

Ingredients

Butter 1 Cup (16 tbs) , softened
Brown sugar 1/2 Cup (8 tbs)
Granulated sugar 1/2 Cup (8 tbs)
Fresh grated ginger 1 Teaspoon
Egg 1
Molasses 1/3 Cup (5.33 tbs)
All purpose flour 2 1/4 Cup (36 tbs)
Baking soda 2 Teaspoon
Salt 1/4 Teaspoon
Ground ginger 3 Teaspoon
Ground allspice 1/4 Teaspoon
Ground cinnamon 1 Teaspoon
Sugar 1/4 Cup (4 tbs) (((for coating)))

Directions

GETTING READY

1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper and set side.

 

MAKING

In a bowl, add in the butter and both the sugars and cream together with an electric mixer until smooth.

Add the grated fresh ginger, egg, and molasses, mix to incorporate everything.

Stir in the flour, baking soda, salt, ground ginger, allspice, and cinnamon. Give it another mix until well blended.

Scrape out the dough in plastic wrap and put it in the refrigerator to let chill and set up for 1-2 hours.

Take the dough and form 1 inch balls, roll them in sugar, and place on the prepared cookie sheet.  Bake for 10-15 minutes.

Take out from the oven and let it cool for a few minutes.

 

SERVING

Serve the cookies with tea or coffee.
