Two classic recipes mashed up to create the Ultimate Christmas cookie. A childhood favorite Animal Crackers plus the season's favorite flavor, Gingerbread.
All purpose flour | 1 1/2 Cup (24 tbs) | |
Old fashioned oats | 1/2 Cup (8 tbs) | |
Baking powder | 1 Teaspoon | |
Salt | 1/2 Teaspoon | |
Ground ginger | 1/2 Teaspoon | |
Cinnamon | 1/4 Teaspoon | |
Ground nutmeg | 1/8 Teaspoon | |
Brown sugar | 1/2 Cup (8 tbs) | |
Unsalted butter | 1/2 Cup (8 tbs) , chilled and cut into pieces | |
Molasses | 2 Tablespoon | |
Vanilla extract | 1 Teaspoon | |
Egg | 1 Large |
GETTING READY
1. Preheat oven to 350 F. Line a baking sheet with Silpat and set aside.
MAKING
2. In a food processor, place the all purpose flour, old fashioned oats, baking powder, salt, ground ginger, cinnamon and nutmeg. Pulse to combine.
3. Add the butter and mix to combine.
4. Add the molasses, vanilla and egg and pulse until the dough forms into a ball.
5. Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.
6. Place the dough between the two parchment paper and roll out to 1/4 inch thick and cut out animal shapes.
7. Place cutouts onto the prepared baking sheet and bake for 12-15 minutes, or until the edges are golden brown.
SERVING
Serve the cookies with milk, tea or coffee.
