Strawberry Rhubarb Compote

Ingredients

Frozen rhubarb 20 Ounce , cut into 1 inch pieces (4 Cups, 1 Package)
Cinnamon 1/2 Teaspoon
Water 1/4 Cup (4 tbs)
Sliced fresh strawberries 2 Cup (32 tbs)
Fructose 1/4 Cup (4 tbs)
Red food coloring 7 Drop

Directions

In 1 1/2-qt casserole combine rhubarb, cinnamon and water; cover.

Microwave at High 10 to 14 minutes, or until rhubarb is tender, stirring 2 or 3 times.

Mash rhubarb slightly.

Stir in strawberries, fructose and food coloring.

Reduce power to 50% (Medium).

Microwave 1 minute, or until strawberries are heated.

For a sweeter compote, serve chilled.
