Iced Hazelnut Zabagliones

Ingredients

Hazelnuts 100 Gram , toasted
Double cream 14 Fluid Ounce (400 Milliliter)
Golden caster sugar 3 Ounce (85 Gram Plus 1 Tablespoon)
Golden caster sugar 1 Tablespoon
Egg yolks 3
Sweet marsala 5 Tablespoon
For coffee marsala sauce :
Chocolate hazelnut spread 4 Tablespoon (Green & Black's)
Sweet marsala 2 Tablespoon
Instant coffee 2 Teaspoon , dissolved in 2 tablespoon boiling water
Boiling water 2 Tablespoon (For Dissolving The Coffee)

Directions

GETTING READY

1) In a food processor, grind the hazelnuts to a fine powder and reserve 1 teaspoon of the whole hazelnuts.

2) Roughly chop the reserved hazelnut, and keep aside for garnish.

3) Line two large pudding moulds or into 8 individual ramekins with cling film.

MAKING

4) In a small bowl, whip the cream with 1 tablespoon of sugar until it forms soft peaks.

5) In a pan, stir rest of the sugar in 100ml water, over a low heat until dissolved.

6) Then boil over a high heat for 1 min and remove from the heat.

7) In a large bowl set over a pan of hot water, whisk the egg yolks and Marsala until it begins to thicken and foamy.

8) Gradually beat in the sugar syrup into the mixture, beat for about 5 minutes until the mixture is thick .

9) Remove from the heat and whisk until cooled.

10) Whisk in the and then fold in the ground hazelnuts.

11) Pour the custard into the moulds and cover with the cling film.

FINALIZING

12) Place the moulds into the freezer for a minimum of 4 hours or overnight, until thoroughly set.

SERVING

13) Unmould on dessert plates, garnish with the chopped hazelnuts, spoon the sauce on the side and serve the Iced Hazelnut Zabagliones immediately.
