Coconut Eyeballs - Easy Halloween Treats

Coconut Eyeballs are a fun and allergy friendly sweet treat for Halloween! Perfect for a classroom party!


Unsweetened shredded coconut 2 Cup (32 tbs) , divided
Coconut oil 1 Tablespoon ((in liquid form))
Honey 1/4 Cup (4 tbs)
Light coconut milk 1/4 Cup (4 tbs)
Salt 1 Pinch
Dried cherries 17



In a food processor, place all the ingredients, except the cherries and pulse until it forms a paste, about 1 minute.

Using an ice cream scoop, take out the mixture and shape into small balls. Moisten your hands to prevent sticking.

Lightly flatten each ball and gently press a dried cherry into the center of each one. Place in the refrigerator for 30-60 minutes.



Pack this delicious treat for your kids lunch box and you can have a bite too.
