In a pot, place all of the ingredients but the pears, bring to a boil so the sugar can dissolve and lover to a simmer, add the pears and cover them with a towel so they can be simmered. Leave them for approximately 20 min or until tender, depend on the size.

MAKING
1. In a plate, put some powdered cinnamon and mix it with a pinch of fine sugar.
2. Rub the rim of your champagne glass with a lime wedge and dip the rim of the glass in the mixture.
3. In a mixing glass, place three pieces of the poached pair at the bottom of the glass.
4. Pour in the fresh pear nectar, and gently mash the poached pear inside the glass.
5. Pop in the ice cubes, pour the wine into the mix, stir that gently and directly pour it into the prepared champagne glass.
SERVING
6. You can serve this drink with a garnish of your choice.
